E-mail pre-defined message writes the variable instead of the data

I have a client who's invoice e-mail body shows the variable instead of the data.

In other words, the body of the e-mail says {%Document Number%}  instead of the actual Document number.

We tried deleting it and re-inserting it to no avail.

The validate button in the e-mail message setup doesn't give any errors.
